Honey Cookies

This recipe is from my grandmother.  So I don't have an exact flour amount.  She just said to add flour to make a stiff dough.  Next time I make these I will pay attention to the amount of flour I use to give you some idea.  It was a favorite cookie of my mom and I made them often for her when she could no longer bake.  They are a soft cookie and a favorite at our house as well.

Honey Cookies

Ingredients

1 cup honey
1 cup sugar
3 eggs, separated
2 tsp. soda
2 tsp. vanilla
Flour

Directions

Preheat oven to 350 degrees

Heat the honey and sugar in a small kettle to melt.  Cool.

Add the 3 egg yolks to the honey and sugar mixture when cool.

Dissolve soda in a little bit of hot water.  Add to mixture along with the vanilla.

Beat the egg white until stiff and add to batter.  Add flour to make a stiff dough.  These can be rolled and cut out.  Or make dough a little softer and roll into balls.  If balls press down a bit before baking.

Bake until lightly browned.

These can be frosted with a powder sugar frosting or can be sprinkled with sugar before baking.
