Knoepfla Soup

A common soup to have in North Dakota.  It  can be found in many restaurants throughout the state.  This is the one usually found in restaurants.  I also make another one my grandmother made, I will have in another post.

Knoepfla Soup

Ingredients

Soup
2 quarts water
1/4 cup onion
1/2 cup celery
1/2 cup carrots
2 or 3 potatoes
1 tsp salt
2 Tbsp chicken soup base

Knoepfla
3 eggs
1/2 cup milk
1 Tbsp vegetable oil
1 tsp baking powder
Flour to make a stiff dough

Finishing ingredients
2 cups whole milk or half and half
1/4 cup butter

Directions

Make knoepfla dough first.  Mix eggs, milk, oil, 1 cup flour and baking powder.  Keep adding flour until the dough is quite stiff.  Put dough on a floured board and work it a bit, bringing it together to a log form.  Cut the log in pieces and roll each one to a fat short rope.  Cover with a cloth or plastic wrap and let set for at least 30 minutes.

Add soup ingredients together in a large soup pot.  Cook until vegetables are soft, about 30 minutes.

In a separate large kettle bring water (about 2/3 full) to boil, add salt.  Pick up the short ropes of dough and cut into the boiling water with a scissor.  Cut small pieces as they will get bigger when cooked.  Cook until soft, about 5-10 minutes.  Drain.

Add knoepfla to the soup ingredients.  Then add milk or half and half.  Cook until hot.

Season to taste.
