Dark Chocolate Bundt Cake

 I found this recipe on a food e-mail I got.  I get a lot of e-mails with recipes on them, and sometimes I find a good one.  It can be frosted or glazed, but sprinkling it with powdered sugar is also good. The texture of this cake is very different. And delicious!


Dark Chocolate Bundt Cake

Ingredients:

  • 2 cups sugar
  • 1 3/4 cups flour
  • 3/4 cup dutch process cocoa powder, plus more for dusting
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1 cup sour milk
  • 1 cup freshly brewed strong black coffee
  • 2 eggs
  • 1 tsp. vanilla

Directions:

  1. Preheat oven to 350 degres.  Butter a bundt pan and dust the inside with cocoa powder, set aside.
  2. Sift together sugar, flour, cocoa powder, salt, baking power and baking soda in a bowl.  Set aside.
  3. In a mixer on low add the milk, coffee, vegetable oil, eggs, and vanilla one at a time, mix until everything is incorporated.  Then with the mixer still on low power, slowly add the dry ingredients. Once all the flour mixture is added, mix the batter for a full four minutes on medium speed.
  4. Then pour the batter into the bundt pan and bake for 45 minutes, or until a cake tester comes out clean. Cool on wire rack for 20 minutes.  Release cake from pan and allow to cool to room temperature on the wire rack.  Then dust with powdered sugar (if using that).  And serve!
