Stromboli

Stromboli is kind of like an open calzone.  You can use various meats or vegetables to your liking.  Or what you have on hand.  It is good served with pizza sauce on the side.  A great dish to have for kids and teenagers.

Stromboli

Ingredients

1/2 cup or more each of assorted vegetables as desired - sautéed mushrooms, peppers or onions
Assorted meats - as thinly sliced ham, hard salami, pepperoni
1/4 pound (per Stromboli) thinly sliced provolone cheese
1 egg, beaten and mixed with 1 Tbsp. water for egg wash

Basic Pizza Dough - buy the dough or recipe follows.

Directions

If making pizza dough, do this about 2 hours before you will need it.

Grease an 11x15 inch pan.  Pat half of dough out in pan.  Cover center third of dough with meats and cheese.  Can add sautéed vegetables if desired.  Cut each side of dough into 8 equal strips, cutting to the edge of the filling.  (A scissor works well for this.) Fold strip to center alternating sides.  Overlap ends of strips to pinch together and seal.

Preheat oven to 375 degrees.  Cover loosely and let rise for 30 minutes.  Brush with egg wash.  Bake at 375 degrees for 30 minutes or until light golden brown.  Slice into pieces and serve.  Serve with pizza sauce if desired.

Basic Pizza Dough

Ingredients

1 cup warm water (110 degrees)
1 envelope active dry yeast, or 2 1/2 tsp.
1 tsp sugar
1 Tbsp plus 1 1/2 tsp olive oil
3 cups flour
1 tsp salt

Directions

In a large bowl combine the water, yeast, sugar and 1 Tbsp oil and stir to combine.  Let sit until the mixture is foamy, about 5 minutes.  Add 1 1/2 cups flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth.  Continue adding the flour 1/4 cup at a time, working after each addition until the flour is incorporated, but the dough is still slightly sticky.  Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3-5 minutes.  (A mixer with a dough hook works good for this.)

Oil a large mixing bowl with the remaining 1 1/2 tsp olive oil.  Place the dough in the bowl and turn to oil all sides.  Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours.  Divide in two and use for stromboli.

Makes 2 Stromboli!
