These cookies are called biscotti, but are made in a square pan. They are baked once, cut in strips and baked again. If you like walnuts you will love these.
Coffee-Walnut Biscotti
Ingredients
1/4 cup unsalted butter
2 cups walnut pieces
2 Tbsp finely ground dark-roast coffee
3/4 cup sugar
1 cup flour
1 tsp vanilla extract
1/4 tsp almond extract
1/8 tsp salt
2 large eggs
1/4 tsp baking powder
Directions
Preheat oven to 350 degrees. Grease a 9x9 inch pan.
In a large bowl mix butter, walnut pieces, coffee, sugar, vanilla, almond and slat. Blend well. Mix in eggs, then the flour and baking powder. Stir until a stiff dough forms.
Wet hands and press dough into baking pan. Bake for 20 minutes.
Remove from oven, cover with a cutting board, and invert. Remove the pan, and then cut cake in half with a serrated knife. Cut each half into 8 rectangular strips. Place strips back in the pan, setting each on one of its thin sides, like dominoes.
Return to oven and bake until golden brown and crisp, 25 minutes.
