Tomato Soup

Here is a soup to try when you have those tomatoes in your garden!

Tomato Soup

Ingredients

4 Tbsp unsalted butter
2 yellow onions, peeled and chopped
2 medium sized potatoes, diced
7-8 ripe plum tomatoes, (blanched, peeled and cut up)
1 Tbsp basil
salt and pepper
2 cups milk

Directions

Melt butter in soup pot.  Add onion and cook for 5 minutes.  Add potatoes and stir briefly.  Add chicken broth and tomatoes.  Simmer 1 hour.  Add basil, salt and pepper and milk.  Heat for 5 minutes, do not boil after addition of milk.

Can add cooked rice if wanted.

Can blend with a hand blender before addition of seasonings and milk.
