Chocolate Cake with Peanut Butter Frosting

Chocolate and Peanut Butter!  Yum!  You could try these as cupcakes too!

Chocolate Cake with Peanut Butter Frosting

Ingredients

1 pkg. plain devils food cake mix
2 Tbsp unsweetened cocoa powder
1 1/2 cup buttermilk
3 large eggs
1 tsp pure vanilla extract
1/2 cup vegetable oil

Directions

Preheat oven to 350 degrees.  Lightly mist a 9x13 inch pan with vegetable spray.  Set pan aside.

Place the cake mix, cocoa powder, buttermilk, oil, eggs and vanilla in a large mixing bowl.   Blend with an electric mixer on low speed for 1 minute.  Scrape down the sides of the bowl and increase the mixer speed to medium and beat for 2 more minutes.  The batter should look thick and combined.

Pour batter into the prepared pan.  Bake the cake until it springs back when lightly pressed with your finger or just starts to pull away from the sides of the pan, 40-45 minutes.  Remove pan from the oven and place on a wire rack to cool for about 30 minutes.

Frost with Peanut Butter Frosting.

Peanut Butter Frosting

Ingredients

1 cup creamy peanut butter
1 stick butter, at room temperature
3-4 Tbsp milk
2 tsp pure vanilla extract
2 cups confectioner's sugar, sifted

Directions

Place the peanut butter and butter in a large mixing bowl.  Blend on low until fluffy, 30 seconds.  Stop the machine.  Add the confectioner's sugar, 3 Tbsp milk and vanilla.  Blend on low speed until the sugar is well combine, 1 minute.  Increase the speed to medium and beat until the frosting lightens and is fluffy, 1 minute more.  Blend in up to 1 Tbsp milk if the frosting seems too stiff.  Use at once.
