Rice Pilaf

A side dish of rice.

Rice Pilaf

Ingredients

2 Tbsp. unsalted butter
1 onion, chopped
3 cloves garlic, minced
1 cup rice
jalapeno (optional)
2 cups chicken stock
1/2 tsp cumin
chopped cilantro, to taste, (optional)
salt and pepper to taste

Directions

Preheat oven to 350 degrees

Melt butter in skillet.  Add chopped onion and cook until soft.  Add garlic and cook another minute.  Add rice and coat with butter, then add remaining ingredients.

Bring to a boil.

Cover and bake at 350 degrees for 40-45 minutes.
