Banana Bread

It seems those bananas we buy always get ripe too fast.  When they start turning black it is time to use them for baking.  Often I put them in the freezer until I have enough for baking.

Banana Bread

Ingredients

1/2 cup shortening
1 1/2 cup sugar
1 cup ripe bananas
2 large eggs
1/4 cup buttermilk
3/4 tsp salt
2 cups and 2 Tbsp flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
1/2 -1 cup chopped walnuts (optional)

Directions

Preheat oven to 350 degrees.

Cream shortening and sugar.  Add bananas and eggs.  Mix well.

Add remaining ingredients.

Pour into 2 greased loaf pans.

Bake for around one hour.  Test with a toothpick to see if done!
