Mandarin Orange Almond Salad

This recipe is from years ago when I still worked in Bismarck.  I think we even had it at my bridal shower!  

Mandarin Orange Almond Salad

Ingredients

1/2 head iceberg lettuce
1/2 head romaine lettuce
2 - 8 oz. cans mandarin oranges, drained
2 cups sliced celery
2 Tbsp minced parsley
4 green onions, sliced including some tops
1 cup slivered almonds
4 Tbsp sugar

Directions

Wash and tear lettuce and romaine into bite size pieces.  Dry lettuces.

Combine oranges, celery, parsley and green onions.  Chill well.

Put sugar in a heavy skillet, add the almonds and stir constantly over low heat until cartelized.  Turn out on foil, cool and break in pieces.

Dressing ingredients

1/2 tsp salt
1/4 cup sugar
dash tabasco
dash lemon pepper
1/4 cup cider vinegar
1/2 cup vegetable oil

Dressing directions

Combine all ingredients,  whisk together.

Toss dressing with salad ingredients and serve immediately.
