Capriels Veal Shank

I saw this recipe on an old cooking show on TV years ago.  I have made it using thick one inch pork chops, have never tried it with veal shank.

Capriels Veal Shank

Ingredients

4 veal shanks (thick bone in pork chops work)  10 oz. each
1/2 cup flour
2 T. olive oil
6 cloves garlic
2 cups chicken stock
3/4 cup dried cranberries
2 tsp fresh thyme
2 tsp pepper
Kosher salt

Directions

Preheat oven to 350 degrees

Carmelize meat in olive oil.  Add garlic then chicken stock.  Add cranberries, thyme and pepper.  Add salt to taste.

Place in a casserole or pan.  Bake for 1 1/2 hours.
Also could simmer stove top on low for an hour.
