This is the cheesecake that Woolworth's served at their counter or restaurant if they had one. We always enjoyed it for the light cheesecake it was.
Fluffy Cream Cheesecake
Ingredients:
Crust: 1/2 lb. graham crackers, made into crumbs
2 T. sugar
1/2 cup butter, melted
Filling: 2 pkg. lemon jello
2 cups boiling water
8 oz. cream cheese
1 cup sugar
2 tsp. vanilla
1 can evaporated milk, well chilled
Directions:
- Dissolve the lemon jello in 2 cups boiling water. Chill until partially set.
- Mix crust ingredients together, and press into 9 X 13 pan.
- Beat cream cheese with vanilla. Add the sugar, and mix well. Add chilled gelatin, and beat thoroughly.
- Whip the evaporated milk into peaks.
- Add cheese mixture, mix well. Pour on crust.
- Chill several hours.
- Can be served with fruit.
