This is a soup recipe that is similar to what they serve at the Olive Garden. This recipe is quite easy to make and just has to simmer for a couple hours.
Zuppa Toscana Soup
Ingredients
- 4 cups chicken broth
- 1/2 - 3/4 cup of heavy cream
- 1/2 small to medium onion chopped
- 3 medium russet potatoes, peels on
- 4 cups chopped fresh kale
- 1 lb Italian sausage
- Salt and pepper to taste
- 1/4 tsp crushed red pepper flakes.
Directions
- Cut potatoes in half then in 1/4 inch slices.
- In large pot, cook sausage. Then add chicken broth and cream. Heat over medium heat, to a boil. Add potatoes and kale. Stir. Add seasonings.
- Cover, reduce heat to low. Simmer for 2 hours, stirring occasionally.
