I love pudding and whenever I have extra milk in my refrigerator I make pudding. I found this easy vanilla pudding recipe that is really good. After it is cooked you can leave it plain or add bananas, coconut or chocolate chips. (The chocolate chips will melt if you add them when the pudding is hot, I usually wait until it is warm to add them.). Or if you would like berries with it or whipped cream that would be good too.
Easy Homemade Vanilla Pudding
Ingredients
- 1/3 cup granulated sugar
- 3 T. cornstarch
- 1/8 tsp. salt
- 2 1/4 cups whole milk
- 2 large egg yolks
- 1 T. unsalted butter
- 1 1/2 tsp. vanilla
Directions
- In a medium saucepan whisk together sugar, cornstarch, salt, milk, and egg yolks. Cook over medium low heat, whisking occasionally (every minute or two), until the mixture is bubbling all throughout. Takes like 7-8 minutes. Once bubbling, continue cooking for one to two additional minutes. At this point the pudding should be thickened but still pourable, it will thicken more as it cools.
- Remove from heat and stir in butter and vanilla extract.
- Transfer to large bowl or serving bowls if desired.
