This is a great summer salad to make. Frozen peas can be used if fresh peas cannot be found. If using frozen peas, thaw them by running water over them in a strainer. Drain well.
Bacon Pea Salad
Ingredients:
- 4 slices bacon
- 3/4 cup mayonnaise
- 1 T. honey
- 1 T. white sugar
- salt and ground black pepper to taste
- 1 (20 ounce) pkg fresh green peas
- 2 ribs celery, chopped
- 1/2 cup cubed Cheddar cheese
- 1/2 cup chopped onion
Directions:
- Gather all the ingredients
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble. Reserve 1 T. bacon grease.
- Whisk mayonnaise, reserved bacon grease, honey, sugar, salt, and black pepper together in a bowl.
- Mix bacon, peas, cheddar cheese, and onions together in a bowl. Drizzle dressing over salad and toss to coat.
- Chill!
