Mounds Bar Pie

A friend of mine from Bismarck sent me this recipe to try for Pie of the Week.  It was for a Mounds Bar Pie.  I was looking through an old handwritten recipe book of my mom's and found a very similar recipe called Coconut Macaroon Pie.  I used a combination of the two for my pie.  

Mounds Bar Pie


Ingredients:

  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 cup soft butter
  • 1/4 cup flour
  • 1/2 cup milk
  • 1 cup flaked coconut
  • 1/2 cup mini chocolate chips
  • 1 tsp vanilla


Directions:

  1. Preheat oven to 325 degrees.
  2. Beat sugar, eggs and salt until mixture is lemon-colored.
  3. Add butter and flour, blend well. Mix in milk and vanilla. 
  4. Fold in coconut and mini chocolate chips.
  5. Pour into pie shell.  Can top with more coconut if desired.
  6. Bake for about 60 minutes.
  7. Cool for 12 hours before cutting.
