Apple Cake

I found this recipe in the paper and saved it.  I found it in with some recipes a week ago.  I still had some apples from our apple trees, in my basement refrigerator drawer.  This recipe uses a lot of apples and I had apples I needed to use.  

Apple Cake

Ingredients:

1 cup butter, softened
2 cups sugar
4 eggs
2 cups all-purpose flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
6 cups coarsely chopped, unpeeled Granny Smith apples or any tart firm apple such as Fuji or Gala

Directions:

Preheat oven to 350 degrees.  Butter a Bundt pan.

Combine butter and sugar in the bowl of an electric mixer.  Beat on low speed until creamy.  Add eggs one at a time and continue to blend.  Slowly add flour, baking powder, baking soda and cinnamon; mix well.

Add apples and mix with a spoon.  Pour into prepared pan.

Bake about 60 minutes until a knife inserted in the center comes out clean.  Let cool before removing from pan. Sprinkle with powdered sugar if desired.
